Honey processing (also called honey sundried, or HSD) sits between washed and natural processing. Some or all of the sticky mucilage is left on the parchment during sun-drying instead of being washed off, which balances brightness with sweetness. The result is typically a fuller-bodied cup than washed coffee, with more clarity than a fully natural-processed one.
