India grows some of the world's best shade-grown Arabica and Robusta. Here's how to choose beans by roast, origin and brew method, with picks.

India is the only major producer that grows nearly all its coffee under shade, mostly in Karnataka, Kerala, Tamil Nadu, Odisha and the Northeast. That gives slower-maturing cherries and cleaner cups. "Best beans" depends on how you brew and what you like, so start with those two questions.

- Buy whole beans and grind fresh if you have a grinder - it's the biggest single upgrade.
