When you add milk and sugar, you can get away with a cheap, over-roasted, high-Robusta coffee - the dairy covers the bitterness. Drink it black and there's nowhere to hide. Coffee that's genuinely good black shares a few traits: mostly or all Arabica, a lighter-to-medium roast, a clean process, and low bitterness.

What Makes a Coffee Easy to Drink Black

  • Arabica, not Robusta. Robusta is roughly twice as bitter and much harsher plain.
  • Washed or honey process. Cleaner, more defined, fewer rough edges than a heavy natural.
  • Medium roast or lighter. Dark roasts add roasty bitterness that milk normally masks.
  • Fresh. Stale coffee tastes flat and papery, which is worse without milk to distract you.

Brewing Tips for Black Coffee

  • Grind fresh if possible - stale grounds taste worse without milk.
  • Water at 90-96 C, not fully boiling, to avoid scorching.
  • Start at 1:16 coffee to water and adjust. Too strong reads as bitter; too weak reads as sour.
  • If it's bitter, grind coarser or use cooler water. If it's sour, grind finer or brew longer.
