  • Arabica or high-Arabica - Robusta is about twice as bitter.
  • Medium roast - dark roasts add roasty bitterness milk normally hides.
  • Grind to match your brewer - fine for a steel filter, medium for drip or press.

Brewing Black From Powder

  • Steel filter: 2-3 tbsp powder, water just off the boil, 15-20 min drip, dilute the decoction ~1:2.
  • French press: 15 g per cup, 240 ml at 94 C, 4 minutes, press and pour out.
  • If it's bitter, use less powder or cooler water; if weak, use more or steep longer.
