In a food business, you're optimising for a batch that stays consistent across dozens or hundreds of cups a day, made by different staff, at different times, under time pressure - and taste is only one factor in that.
What Actually Matters at Volume
Batch-to-batch consistency. Your regulars will notice if today's filter coffee tastes different from last week's. A supplier who roasts to a fixed recipe every time - not "seasonal" small-batch variation - is more valuable in food service than a bean that's slightly more interesting but inconsistent.
Bulk and wholesale pricing. Buying retail-sized bags for a high-volume operation is expensive and means constant reordering. Wholesale pricing on larger quantities (5kg, 10kg, and up) brings your per-cup cost down meaningfully, which matters directly to your margins.
A blend that holds up to real-world serving conditions. Coffee that's kept warm on a hot plate, brewed in bulk urns, or pulled through a busy service window behaves differently than a single careful pour-over. A blend that turns bitter or flat quickly under heat or high-volume brewing will cost you more in complaints and re-brews than it saves in price. Robusta-inclusive blends tend to hold body and crema better under these conditions than delicate pure-Arabica lots, which is part of why classic filter-coffee and espresso blends lean on a Robusta or chicory component for food-service use.
Reliable supply and reorder cadence. Running out of your house coffee mid-shift is a real operational problem. A supplier who can commit to consistent lead times and reorder quantities is worth more than one who's occasionally cheaper but unpredictable.
