Light roast is stopped soon after first crack. It keeps the most of what the bean brought from the farm - fruit, floral and tea-like notes, brighter acidity, a lighter body. It's the roast for tasting where a coffee is from, and it's best brewed black in a pour over or filter.
What Light Roast Is Good For
- Pour over and filter - methods that show clarity and aroma.
- Black coffee - no milk to hide the delicate notes.

- Lower bitterness - lighter roasts are less roasty-bitter (though more acidic).
It's less forgiving: light roasts can taste sour or grassy if under-extracted, so grind a little finer and use hotter water than you would for a dark roast.
