How to Keep It Smooth in the Cup

  • Grind coarser. Fine grinds over-extract and turn harsh.
  • Cooler water. 90-93 C is plenty; boiling water scorches.
  • Shorter brew. Pull a pour over at 3 minutes, a press at 4.
  • Fresh beans. Staleness reads as harsh and papery.
  • Filtered water. Hard, chlorinated water dulls and roughens the cup.
