Processing decides a lot of a coffee's flavour. Washed is clean and bright; natural is fruity and heavy. Here's how each is made and which to pick.

Natural vs Washed Coffee: What's the Difference?

After a coffee cherry is picked, the fruit has to come off the seed (the bean) before drying. How that's done - the "process" - shapes the cup as much as the variety or the altitude.

Washed (Wet Process)

The skin and fruit pulp are removed by machine, then the sticky mucilage is fermented and washed off before the bean is dried. Nothing fruity stays in contact with the bean.

  • Cup: clean, bright, well-defined acidity, clear origin character.
  • Best for: pour over, filter, black coffee.
  • Feels: crisp and transparent.

Natural (Dry Process)

The whole cherry is dried in the sun with the fruit still on, for weeks, before the dried husk is removed. The bean absorbs fruit sugars and ferments lightly as it dries.

  • Cup: fruity, jammy, heavy body, lower perceived acidity, sometimes boozy or wine-like.
  • Best for: people who find washed coffees too light; espresso; adds punch to blends.
  • Feels: bold and sweet.

Honey / Pulped Natural
