Light Roast vs Medium vs Dark Roast Coffee
Roast level changes acidity, body, bitterness and flavour far more than caffeine. Here's what each roast does and which to pick for how you drink coffee.
Roast level is the biggest lever on how coffee tastes - bigger than origin for most people's palates. It changes acidity, body, sweetness and bitterness. What it barely changes is caffeine: by weight, dark roast has marginally less than light, a difference too small to matter in practice.
Light Roast
Stopped soon after "first crack." Keeps the most origin character - fruit, floral, tea-like notes - plus the most acidity and a lighter body. Can taste sour or grassy if under-extracted, so it needs a careful brew. Best for pour over and filter, black.
Medium Roast
The balance point. Acidity softened, sweetness developed (caramelisation), origin still recognisable, body fuller. The most forgiving and the most versatile - black or with a little milk.
Dark Roast (Vienna, French)
Taken well past second crack. Origin flavour mostly replaced by roast flavour: smoky, bittersweet, chocolatey, low acidity, heavy body, oily surface. Bold and consistent. Best for espresso and strong milk coffee.

Which Should You Buy?
- Black coffee, pour over, filter: light or medium.
- Espresso, moka pot, strong milk coffee: medium-dark or dark.
- Not sure / want forgiving: medium.
- Chasing caffeine: roast doesn't matter - the bean (Robusta) and the dose do.
